Heartbeat of God

"Lent is you and I, like Saint John the well-beloved, putting our head on the bosom of Christ and hearing the heartbeats of God (Jn 13:21-25). When you hear the heartbeats of God, You change. We try to listen well to those heartbeats during Lent, so that we may not only repent and make our peace with God, but forgive all who have hurt us. Let each one of us open his or her heart to God, and let him wash us clean, let him fill us with a hunger for him, and a thirst. Let him make us his own, to that when we come to Easter our joy will be beyond reckoning." Servant of God Catherine De Hueck Doherty 

Imagine hearing God's heartbeat...

What would that be like? 

A picture is painted so beautifully of St. John's head pressed on the heart of Jesus. 

I've heard about and pictured this image before but I have never thought about why St. John did what he did. 

The answer is not because St. John the beloved was the favorite. 

Remember, Jesus doesn't have favorites. 

St. John was an ordinary man who boldly answered the call of Jesus. 

The call to be His and to be loved by Him. 

We are all called to be His Beloved. 

St. John understood the deeper meaning of the word Beloved. 

This Lent, I don't want to just imagine the heartbeat of God. 

I want to lean in close and feel the heartbeat of the One who calls me Beloved. 

I invite you to join me.

The best way to lean close is to spend time with Him. 

I was going to list ways of how to spend time with Jesus but then I realized something...

A heartbeat is best heard in silence. 

My Lent Challenge: quiet your heart and listen for the heartbeat of God.

Tortilla Pizza

I would have never thought to make pizza crust out of tortillas, but this has to be the best and easiest Gluten Free Homemade Pizza!

 Ingredients: 

Gluten Free Tortillas

Tomato sauce 

Tomato paste

 Mozzarella Cheese 

Canadian Bacon & Pineapple

Step 1 

Spray a frying pan with cooking spray and fry tortilla ✅


Step 2 

Mix tomato sauce and paste together in a bowl and then spread sauce on the tortilla ✅


Part of Step 2 

Sprinkle Mozzarella Cheese ✅


Step 3 

Place the second tortilla on top of the other tortilla and flip to fry both sides ✅

(At this point it will look like a tomato sauce and cheese quesadilla.)


Step 4

Add whatever toppings you like! 🍕

Does pineapple belong on pizza? 🍍

My vote is YES! 


Step 5 

Spray a baking sheet and cook in the oven at 350 for 10-15 minutes ✅

Doing What I LOVE

Happy Valentine's Day! 

 I thought it would be a fun idea to write a blog about the job I love! 

I have volunteered with Prairie Mountain Nutrition for almost 8 years.

 I began volunteering after heart failure. 

Prairie Mountain Nutrition is a Meal site not only for senior citizens but for everyone!  

Lunch is served every Tuesday at noon in Cottonwood, in the basement of the Cottonwood Hall. 

Prairie Mountain Nutrition also serves lunch at noon in Winchester every Wednesday. 

A small donation is asked for a five star meal. 

Prairie Mountain Nutrition delivers at least 45 take out meals a week!

 Delivery meals include fresh bread or rolls.

Soup and homemade bread are served every week.

I have made so many friends through this program; including the fantastic kitchen crew I enjoy working with!

I have learned so much from volunteering!

 I love serving the beautiful people in our community!

I love working in the kitchen and preparing food for the people I love!

God has blessed me with a servant's heart and my heart is filled with joy because of it.

We had an amazing turn out today for Prairie Mountain Nutrition! We had 44 in house and 50 take outs today! Thank you to all who celebrated Valentine’s day with us by ordering out and dining in with us!

Bean Dip Recipe

This bean dip is my signature appetizer to bring to get togethers and parties! 

Since it’s Super Bowl Sunday I thought I would share these few easy steps to making this bean dip!


ingredients: 

Refried beans 
Sour cream 
3tbs Taco Seasoning
Shredded cheese 
Olives 

In a 9x11 or 9x13 pan 
(I used a 9x11 because it had a lid.) 

Layer the refried beans first. 

Next in a separate bowl mix sour cream and taco seasoning together.

I used 1/2 of a 24oz container. 

Then layer the sour cream mixture on top of beans.
 
Cover the sour cream layer with shredded cheese 

And finally cut and sprinkle  olives!  

Serve with your favorite tortilla chips!

You’re ready for Super-Bowl!

Why Must We Suffer?

Last night my friend shared this quote from a book titled, Fearless:

 "What we fear is what we serve." 

We fear suffering. 

Often our fear is from not wanting to suffer. 

I am not suggesting we love suffering. 

However, I am suggesting we give our sufferings to God. 

We live in a broken world where suffering is all around us. 

Visible and invisible. 

Yet, God doesn't want us to fear or to suffer. 

Do not fear, for I am with you,
do not be afraid, for I am your God;
I will strengthen you, I will help you,
I will uphold you with my victorious right hand. 
Isaiah 41:10 

Today I listened to Day 38 and Day 39 from the Catechism in a Year podcast. 

After Day 39, I went back and listened to the words that stood out to me. 

"God does not remove our suffering. He redeems our suffering." Fr. Mike Schmitz

 Why is there suffering?

St, Bernadette answers this hard question simply and beautifully.

I pray for you - whatever suffering you are going through at this time and in this moment.

I pray that Jesus meets you in your suffering. 

I pray you give your broken heart to the One who has redeemed and called you by name. 

I pray that He who has suffered, pours out His purest Love on you and comforts you from the Cross.
